Fried Green Tomatoes
Servings 4
4 tomatoes, Very Firm
½ tsp. salt
½ tsp. pepper
2 T. vegetable oil
½ c. flour, seasoned with salt and pepper
2 eggs, well beaten
Slice the tomatoes into ½ inch thick slices. Season with salt and pepper. Dredge the tomato slices in flour, then dip them in egg and dredge again in flour Sauté the tomatoes until golden brown on each side. To oven fry the tomatoes omit flour, dip in egg and a single coat of cornmeal. Bake for about 10 minutes at 450° or until brown.
