Peach Beurre Blanc

Servings 4

2 c. peaches, peeled, diced
1 T. garlic, minced
2 oz. onion, minced
1 T. salad oil
2 T. basil, shredded
2 oz. white wine
1 T. lime juice
1 T. sugar
2 oz. vinegar
4 T. butter, softened

Heat the vegetable oil in a skillet. Sauté the onions and the garlic until clear. Add the white wine and reduce by half. Add the sugar, vinegar and lime juice. Heat to dissolve the sugar. Remove from heat and whisk in butter a knob at a time until the sauce thickens. Add the basil and peaches. Adjust seasoning and serve with fish.
