Chef Maxwell's Oatmeal and Apple Scones
1 1/4 cup rolled oats
3 cups un-sifted all-purpose flour
4 tsp. baking powder
1 T. vanilla sugar or regular granulated sugar
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
1/4 tsp. allspice
2/3 cup unsalted butter
1 golden delicious apple, chopped
1 1/3 cup buttermilk
Heat oven to 425 degrees F. Grease baking sheet. Combine dry ingredients in bowl of food processor. Cut butter into dry ingredients using pulses, until the mixture resembles coarse crumbs.
Transfer to mixing bowl. Add apples and buttermilk to mixture. Stir until just bound together. Turn dough on to heavily floured board. With floured hands, knead 6 to seven times to form soft dough. Divide mixture in half. Roll halves into 7” rounds.
Cut each round into four wedges. Place on baking sheet and bake for 15-18 minutes until golden brown. Serve immediately.
