Chef Maxwell's Balsamic Vinegar & Bacon Dressing

7 bacon strips, cooked crisp and diced
1/3 c. and 2 T. vinegar (something flavorful but
complementary: balsamic, malt or fig-infused)
1 T. sugar
1/2 tsp. ground mustard
1/4 tsp. pepper

Heat the bacon in a skillet and render until the bacon is crispy and all fat is melted. Remove the bits for later. Remove from the heat and whisk the vinegar into the bacon fat. Whisk in the sugar. Whisk in the ground mustard and season with salt and pepper.
