Chef Maxwell's New Potato Salad
2 c. new potatoes, diced
½ c. red onion, finely diced
¼ c. green pepper, finely diced
¼ c. red pepper, finely diced
¼ c. minced scallions
¼ c. celery, finely diced
1 T. chopped fresh thyme

1 T. Worcestershire sauce
2 T. horseradish
½ c. mayonnaise
1/8 c. Dijon mustard
¼ c. chopped, crisp bacon
Salt & pepper to taste
Cayenne pepper to taste |
Steam new potatoes until tender and put in an oven at low temperature to dry. Saute all vegetables and thyme until softened. Add to potatoes. Mix well all wet ingredients. Add to potato mixture and toss to coat.
