Chef Maxwell's
Chesapeake Ray, Sauté
½ cup olive oil
¼ cup Cider vinegar
1 ounce lemon juice
1 T oregano leaves
Salt and Pepper
2 T honey
6 ounces Chesapeake Ray, filet
Combine all ingredients, except ray, and mix well. Marinate ray in the dressing for about 30 minutes. Grill or sauté ray filet until medium rare.
